

Today we’d like to introduce you to Ashley Ray.
Hi Ashley, we’re thrilled to have a chance to learn your story today. So, before we get into specifics, let’s briefly walk us through how you got to where you are today.
Being born at 24 weeks, the doctors told my Mom that I would never be able to see or hear her; I’d be completely deaf and blind, along with a severe developmental delay that would require around-the-clock care for me. Fast forward 31 years later, and I’ve done everything they said I couldn’t. According to the doctors, I shouldn’t even be here today.
Being born in Cleveland, OH, and raised between there, Pittsburgh, and Long Beach, I’ve always had a passion for being in the kitchen, specifically baking delicious items for family and friends to sample. As an adult with a decade-long stay in Atlanta and newly relocated to Jacksonville, my passion has always remained strong. Still, I only considered turning it into something more in July 2020. I decided to take the leap of faith to apply to the Auguste Escoffier School Of Culinary Arts, even with the doubts lingering in my mind. Thirteen months later, I received my Pastry Diploma and started to plan my in-home baking business, Sweets & Treats, by Ashley.
My fiancee Chris and Mom have inspired me to branch out into more than just the standard cupcakes, cookies, and cakes, but to go above and beyond to make CBD-infused, sugar and dairy-free alternatives. With my Mom having arthritis and diabetes and currently recovering from a second heart valve replacement surgery that sent her into a coma, and Chris having Hodgkins Lymphoma as well as dairy complications, having treats available that are healthy, taste great, and helpful to these and other ailments are necessary. I’m still baking at home and looking forward to growing clientele in Jacksonville and surrounding areas.
You wouldn’t say it’s been obstacle free, but so far would you say the journey has been a fairly smooth road?
Having a vision impairment and being legally blind has definitely been a challenge; however, dealing with this disability since childhood, I’ve come to adapt and learn how to do things differently and more efficiently, but it hasn’t always been easy. I’m unable to drive, so I offer shipping or pickup instead when dealing with deliveries. Dealing with the oven and baking, I’ve used adaptive technology like magnifiers, stickers with raised bumps, talking thermometers, and large print measuring cups to assist with baking. Even with this challenge, I’ve come to learn that I’m still very skilled and talented in baking and that it’s my calling.

I specialize in gourmet-filled cupcakes, brownies, and cookies, but I also make cheesecakes, cake cups, and treat boxes. What would you say has been one of the most important lessons you’ve learned?
An important lesson I’ve learned is not to let any disability or challenge stop you from pursuing something you love. Don’t be scared to go for it, believe in yourself and whatever your passion is, and no matter what anyone else says or thinks, just do what you love!
