Life & Work with Amber Junker

Today we’d like to introduce you to Amber Junker.

Hi Amber, please kick things off for us with an introduction to yourself and your story.
Growing up in the small town of Penney Farms, Florida I was always too much of a princess for Penney Farms, but to Penney Farms to be a princess. So I spent most of my life never fitting in anywhere and was nicknamed the Penney Farms Princess. Now, I proudly wear the ‘crown’ of Penney Farms Princess. I’m a wife, a step-mom, a passionate food blogger, and a proud voice-over talent.

I’ve written, produced, and provided voice talent for award-winning radio commercials, tv commercials, online videos, and more. I’m currently providing voice talent to several businesses in a wide range of industries. With over 15 years of experience in developing marketing and advertising strategies, I have an extensive understanding of how to make brands shine.

I believe in giving back to my community and I’ve been involved in several local charities such as Builder’s Care, daniel Kids, and many others.

Alright, so let’s dig a little deeper into the story – has it been an easy path overall, and if not, what were the challenges you’ve had to overcome?
My journey has been anything but smooth. I’ve been through unimaginable pain and heartache, but every day I choose to move forward with a loving heart.

After a successful career in marketing, I quit corporate America, married the man of my dreams, and started my own company, PFP Consulting. I turned that nickname that was intended to make fun of me into a business. I started as a marketing consultant for small local businesses, as well as doing voiceovers for tv and radio commercials. Then, after barely a year of success, I had to shut everything down and became a full-time caregiver for a family member after a tragic motorcycle accident.

After that, we decided to start a family, and I lost 3 babies to miscarriage. Then, I went through an extremely intense round of IVF and lost 4 more baby embryos. We then decided to adopt, were chosen twice, and both times the birth mothers changed their minds. To say that I was devastated was an understatement. Through all of that, I’ve been a full-time stepmom, and in a blended family, even when it’s good, it’s complicated. My fellow step-parents out there understand this.

My entire adult life, I’ve been told that I should open a restaurant or write a cookbook, but life was always far too chaotic for that. In 2020, though, I found myself at home with plenty of time during quarantine and decided to start PenneyFarmsPrincess.com, a place to share my recipes, meal ideas, kitchen tips, and tricks, support locally-owned restaurants, and share a little bit of real life. And so PenneyFarmsPrincess.com began.

As you know, we’re big fans of you and your work. For our readers who might not be as familiar what can you tell them about what you do?
I love yoga! My yoga practice continues to be a big part of my healing journey. Some days are hot power yoga with headstands and acrobatics. Other days are just simply breathing.

Let’s talk about our city – what do you love? What do you not love?
Jacksonville will always be home for me, and I’m very proud of being from Northeast Florida. I love the diversity we have here, and how every little nook and cranny of our community is different. There’s something for everyone here.

What do I like least about our city? The criticism we receive from pessimists who think our city isn’t the way they think it should be.

    What a great interview! We have such talent here that we would never even know about without interviews such as these!

    I loved reading about beautiful Amber! I have met her before and know her family, but had no idea what an amazing talent she was, or of the obstacles that she has had to overcome. What an amazing story! I also know she has wonderful parents and I know they are very proud of her.
