Hi Joshua, so excited to have you on the platform. So before we get into questions about your work-life, maybe you can bring our readers up to speed on your story and how you got to where you are today?
We started selling plate taking pictures and selling them on our social media platforms! We build this business from the ground up selling plates on instagram! Until we got our very first truck now fast forward we have 4 trucks in Jacksonville florida

We all face challenges, but looking back would you describe it as a relatively smooth road?
It was definitely not a smooth road! There was so much we had to learn from starting to operating. From daily operations to almost being the jack of all trades with the business

Fatboy Fried Rice is a Jacksonville-based, multi-unit food truck brand known for bold, high-heat Asian-fusion cuisine rooted in Filipino and street food influences. Built from the ground up, Fatboy has grown into a local staple by delivering consistent, made-to-order dishes with strong flavor and fast execution.

Signature items like Beef Bulgogi Fried Rice, Chicken Teriyaki, and Pork Sisig highlight the brand’s focus on quality ingredients, in-house sauces, and wok-style cooking techniques that bring depth and authenticity to every plate.

What sets Fatboy apart is the combination of culinary consistency, strong branding, and community connection. Beyond the food, the brand represents hustle, culture, and creativity—reflected in its visual identity, customer experience, and growing digital presence.

What would you say have been one of the most important lessons you’ve learned?
The most important lesson has been the value of consistency and systems. In the early days, it’s all hustle, but real growth comes from building processes that allow your team to deliver the same quality, speed, and experience every single time.

We’ve also learned how important it is to take care of the community that supports us. Our growth is because of them, and we make it a priority to give that same energy back—through our service, presence, and how we represent the brand.

Staying true to our roots while continuing to evolve has been key. At the end of the day, it’s about building something bigger than yourself—a team, a system, and a brand people trust.
