3rd Wave Coffee Roasters was born from the shared vision of husband-and-wife team Jared and Ashley, who after 18 years together turned their shared vision into a new chapter of purpose — building a business side by side. What began as a roasting venture has grown into a mission: to serve their community and create connection through every cup.

For them, coffee is more than beans and roasting. It’s about weaving family values into their entrepreneurial journey and pouring love and care into every bag they roast. With the support of many helping hands and a community that continues to uplift them, 3rd Wave has flourished into something far bigger than a business — a movement rooted in heart.

Now planted in West King, St. Augustine, Jared and Ashley are grateful to be part of a neighborhood where small businesses champion one another. Their mission is simple but powerful: Helping Our Community Share the Spirit of Coffee. Because at the end of the day, it’s not just about what’s in the cup — it’s about the people gathered around it.

Would you say it’s been a smooth road, and if not what are some of the biggest challenges you’ve faced along the way?
The path hasn’t been linear. Before taking over 3rd Wave, we had never even seen coffee roasted, let alone imagined doing it ourselves. The business we purchased came with a loyal customer base but also expectations, which challenged us to quickly grow into our own voice and style as roasters.

What we discovered is that coffee is vast and nuanced — a craft that takes years to truly understand. While we still consider ourselves students, from the beginning our mission has been clear: to bring high-quality, thoughtfully sourced coffee to our community with heart and humility.

In the early days, we worked with small inherited roasters that could only handle a few pounds at a time. Eventually, we invested in a larger roaster that became a turning point, allowing us to meet demand and grow in a way that felt sustainable for our family and future.

Today, we’re still learning, still evolving, and deeply grateful to serve the St. Augustine community through the spirit of coffee.

At 3rd Wave Coffee Roasters, coffee is more than a product — it’s a way to connect. Every roast is crafted as an invitation to slow down, share, and be part of something meaningful.

Located in St. Augustine’s West King neighborhood, 3rd Wave is a family-run roastery specializing in organic, small-batch coffee. What makes it unique is the heart behind the business. As a husband-and-wife team, Jared and Ashley built 3rd Wave with love — not only for each other, but for their community. Their vision was to create a life where home and work could coexist, and where their values could extend beyond the kitchen table into the homes of neighbors and friends.

That vision has grown into a roastery that reflects both quality and care. A recent equipment upgrade allows them to meet growing demand while staying true to their small-batch roots. Today, 3rd Wave offers freshly roasted beans, local pickup, wholesale partnerships, and a welcoming spirit that feels like family.

Their mission remains simple: helping the community share the spirit of coffee — one cup and one connection at a time.

In terms of your work and the industry, what are some of the changes you are expecting to see over the next five to ten years?
Over the next 5-10 years, we see the coffee industry moving toward more transparency, sustainability, and connection. People care more than ever about where their coffee comes from, how it’s grown, and that it supports farmers and the planet — and that’s a shift we’re excited to be part of. We also see a growing love for quality over quantity, with coffee becoming less about a quick fix and more about creating an experience to savor. As roasting technology improves and sustainability becomes a bigger focus, we’re committed to growing right alongside these changes — staying true to our roots, embracing innovation, and always keeping our community at the heart of everything we do.
