Daily Inspiration: Meet Major Wallace

Today we’d like to introduce you to Major Wallace.

Hi Major, we’d love for you to start by introducing yourself.
One of earliest food memories is eating spaghetti with my grandma after she helped me with homework. Simply put I love good food and I love to cook good food. I experimented in the kitchen until 2023 I decided to go to culinary school at FSCJ. I was cooking so much between semesters that I started Major Flava Mondays. I would make something that I’ve never made or perfect a dish I haven’t made in a while and post it on instagram. Since Major Flava Mondays, my business partner Rizhod and I found a kitchen space and got a contract catering “Beats, Brunch and Bubbly” twice a month hosted by DJ Mas Appeal.

Alright, so let’s dig a little deeper into the story – has it been an easy path overall and if not, what were the challenges you’ve had to overcome?
No struggles, but definitely moments for character development. Honestly, we’ve had nothing but support. Actully, chef Nickey Boyd has been a big help, she connected us with DJ Mas and doesnt hesitate to repost food or event flyers.

Appreciate you sharing that. What else should we know about what you do?
I specialize elevated southern and southern fusion food. My signature dish, is my fried chicken and mac and cheese. Once they take that first bite and their shoulders drop down, I know its good, thats what I look for. What sets me a part is that each plate is complimented with a handsome smile, Ma Dukes paid a lot for the braces, so you get a flash of the pearly whites with that bite.

If we knew you growing up, how would we have described you?
I was quiet, short, and hungry. Loved to watch and play basketball, but my height didn’t catch up with my aspirations, so I decided to become Kobe with the cast iron.
