Hi eileen, thanks for joining us today. We’d love for you to start by introducing yourself.
We have been open. At the Hidden Crab since 2018. At this location we actully began our restaurant and dream called Shuckers in 2008 then we moved shuckers on the water in 2018 and we converted this spot into the hidden Crab. It’s like a Cheers show everyone know everyone when they walk in. We love the small town feel from our amazing customers and even through its hidden behind a circle K store all the locals knows wheee we are. We love to see new faces and especially all our locals . I’ve grown up in this town and I love being a our to operate two restaurants right here in my own town. ❤️
I’m sure it wasn’t obstacle-free, but would you say the journey has been fairly smooth so far?
Some of the struggles are as with any restaurant is when we have cold winters we have alot of slower days and it’s also is alot of dedication and hours to put in but when you have a love and passion for something like this it’s a great thing. I spent 24 years on the fire dept before retiring and that was tough trying to juggle all the hours needed for a full time job and running 2 restaurant but also a blessing
As you know, we’re big fans of you and your work. For our readers who might not be as familiar what can you tell them about what you do?
I worked on the Jacksonville Fire dept as a Captain / paramedic / Rn for 24 years and retired 4 years ago and I also Worked at the Florida state College in Jacksonville working for 18 years as a adjustment instructor teaching Paramedic and EMT school as well and retired 4 years ago from there and continue to run my 2 restaurant now Shuckers Oyster Bar and The Hidden Crab
If you had to, what characteristic of yours would you give the most credit to?
I think having a passion and love and drive to do what I enjoy and I’ve always loved helping people. And I’ve always loved to cook and entertain people
