Hi Rebeca, we’re thrilled to have a chance to learn your story today. So, before we get into specifics, maybe you can briefly walk us through how you got to where you are today?
Eight years ago, we packed up our lives in Miami—our hometown, our roots, our crew—and made the big leap to Jacksonville. It wasn’t easy saying goodbye to all the people and places we loved, but we knew this move was part of something bigger.
As a mama to a special needs kiddo, I quickly realized the 9-to-5 corporate grind just didn’t fit our family’s rhythm. My little guy—just 3 years old at the time—had recently been diagnosed with ADHD and developmental delays. He needed structure, support, and a mama who could be fully present. But when I asked my then-boss if I could take my lunch at 3 PM to pick up my son from school, the answer was a hard no. That was the moment my husband and I made the life-changing decision: I would stay home and be there for our boy, fully and fiercely.
Now, being a stay-at-home mom has its beautiful moments—but let’s be real, it just wasn’t for me. I thrive when I’m creating, working, building something. “Housewife life” wasn’t cutting it.
Fast forward five years ago to Thanksgiving. I invited some friends over, and like any good host, I wanted to impress. I whipped up a charcuterie board that wowed the room. And just like that, the spark was lit. Let’s Cheese was born—a little dream inspired by a big love for bringing people together, just like my mom always did. She was the “hostess with the mostest,” and I guess that gene runs strong!
Starting my own small biz was scary—like, really scary. There were tears, late nights, big lessons, and cheesy messes. But there was also growth. So much growth. And through it all, I’ve built something I’m wildly proud of. Let’s Cheese isn’t just a business—it’s my baby.
Can you talk to us a bit about the challenges and lessons you’ve learned along the way. Looking back would you say it’s been easy or smooth in retrospect?
Has it been a smooth road? Ha! Not even close—and that’s what makes the journey so meaningful.
Building Let’s Cheese has been a wild ride filled with unexpected twists, a few detours, and more “what am I doing?!” moments than I can count. Starting a business while balancing life as a special needs mama? Let’s just say multitasking became my middle name.
There were days I questioned everything—when orders piled up, supplies didn’t arrive, or my son needed me more than ever and I had to put the business on pause. I’ve cried over cracked cheese boards, stayed up way too late designing last-minute grazing tables, and fought through imposter syndrome more times than I’d like to admit.
But every challenge taught me something—about business, about balance, about resilience. I learned how to ask for help (big one for me!), how to pivot when things didn’t go to plan, and how to keep showing up even when it felt hard. The road may have been bumpy, but it’s led to something beautiful.
And honestly? I wouldn’t trade it for a smoother ride. The struggles shaped the story—and made the wins that much sweeter.

What quality or characteristic do you feel is most important to your success?
If I had to choose one quality that’s been key to my success, it would be resilience—hands down.
Life threw us some curveballs early on, from navigating a big move, to parenting a special needs child, to stepping into the unknown world of entrepreneurship. But through every challenge, I’ve learned how to adapt, keep going, and find creative solutions (even when things got extra cheesy in the chaos 🙃).
Resilience has kept me grounded on the hard days and humble on the good ones. It’s helped me stay true to my “why”—serving others through food, creativity, and connection—while still growing and evolving.
Of course, resilience doesn’t work alone. A close second? Passion. I love what I do. Creating something beautiful that brings people joy—it lights me up every single time.
