Today we’d like to introduce you to Frank O’Rourke.
Hi Frank, please kick things off for us with an introduction to yourself and your story.
As a student at Flagler College, there was a fun little breakfast spot around the corner. It was owned by a fun and creative guy, Ned Pollack, and we became friends. He outgrew that location and opened Gypsy Cab Company in 1983. Of course, we followed him there and continued to enjoy his creative menu. After graduating, I found some willing partners to buy The Beachcomber in St. Augustine Beach. We had a good run at the “Comber,” which I sold in 2000 and then transitioned into a real estate career. I continued to support and hang out with Ned and his manager, Patrick, at Gypsy over the years. Gypsy Cab received many accolades and awards and became a fixture in the St. Augustine foodie scene. Ned eventually sold the business to Patrick, and Pat continued to run Gyspy until 2021. Then, it was my turn! With the help of my family, Kendra Turley Ned and Pat, we took over the operation and have continued to honor the innovative menu and recipes that have made Gypsy Cab so popular.
Let’s dig deeper into the story – has it been an easy path, and if not, what challenges have you overcome?
Since we took over during the “Covid years,” we struggled early on. Supply chain issues, food costs, etc., all required some adjustments. However, we have transitioned away from those issues and are in a more stable environment.
As you know, we’re big fans of Gypsy Cab Company. What can you tell our readers who might need to be more familiar with the brand?
- When Gypsy Cab Company opened its doors in 1983, something new was introduced to the world ~ urban cuisine!
- “It’s a little of a lot, a blend of a lot of little influences,” says owner Frank O’Rourke. “A creative and innovative culinary team prepares our cab fare (daily menu) and ‘borrows’ from Italian, German, Cajun, Mediterranean, classical European, Southern, Oriental, and ‘Floribbean’ cuisines.”
Gypsy Cab Company has a reputation for being a casual restaurant with exceptional food that offers a unique dining experience—located on Anastasia Island, just over the Bridge of Lions.
What makes you happy?
My staff and I take great pride in customer satisfaction. We realize that when a customer chooses to dine with us, they expect what they will experience. We, too, have expectations on how to meet and exceed our customers’ expectations. We are happiest when we are told that their dining choice was one they enjoyed and are eager to return soon! Returning customers are the most important “ingredient” in a successful restaurant.
