

Today we’d like to introduce you to Collin Chase.
Hi Collin, we’re thrilled to have a chance to learn your story today. So, before we get into specifics, maybe you can briefly walk us through how you got to where you are today.
I have been a professionally trained chef for almost twenty-plus years. I also went to Ole Miss and had a political science degree. I have always had a talent for creating unique and very flavorful foods. I have a very high-level palate and have been able, with my family and myself, to travel and try different cuisines from other people and locations. I started my food trailer and catering company in Nashville, TN, and brought it with me when I moved back to Jacksonville in November 1921. I believe in serving the highest quality food that leaves a positive, memorable impression and opens people up to different flavors and food items. I look forward to expanding my brand and increasing the catering opportunities.
Would you say it’s been a smooth road, and if not, what are some of the biggest challenges you’ve faced along the way?
Owning your own business is never a smooth road, but I learned and grew with each challenge I faced. The food truck industry is similar to running a restaurant, but some unique challenges differ from a brick-and-mortar or regular restaurant location. The level of competition is very high, and going into an industry as competitive and grueling as the food industry is no place for people with no prior experience. Plus, every level of government wants its cut and piece of the pie(federal, state, and local). If you have never worked in the food industry, this industry is not for you, and find another hobby. I look forward to growing my business and overcoming any challenge that is before me.
Alright, so let’s switch gears a bit and talk business. What should we know about your work?
I have been a classically trained chef for over twenty-plus years. Cooking is a part of me; there is my past, present, and future in every dish I make. The difference between a cook and a chef is that my creativity is part of who I am, and I can create anything from my head and past experiences. I am known for made-from-scratch southern-inspired dishes and very flavorful food items that are unique and different from most other food trucks. I also am not bound by a regular set menu and change it to whatever is needed.
Where we are in life is often partly because of others. Who/what else deserves credit for how your story turned out?
My mentors have been my parents and some culinary chefs I have worked with. I also had a few teachers in high school and college that influenced me. They cultivated my mind and positively challenged some of my beliefs, which is what any good mentor should do.
