

Today we’d like to introduce you to Stephen Hutson.
Hi Stephen, please kick things off for us with an introduction to yourself and your story.
We are celebrating our 10th anniversary! It all started while I was going to Flagler College. I worked for a local family-owned and operated restaurant, Pizzalley’s Chianti Room. I enjoyed the pace of the business and what it takes to make a successful restaurant. After I graduated, I started saving money to open my place. In 2012 I signed our first lease and began to renovate the property. We opened our doors on January 24th, 2013. We started small, with 30 seats and a minimal menu. Slowly over the years, we have grown into what we are today. We have moved properties and survived a pandemic and 4 hurricanes. I am thankful for our amazing, hard-working staff and a community that has always been supportive and helpful when speed bumps come our way. 2023 is a big year for us, and we’re excited to show our guests the new Catch 27.
Alright, so let’s dig a little deeper into the story – has it been an easy path overall, and if not, what were the challenges you’ve had to overcome?
Building a business is hard. We have had 100’s of employees. We have been hit by 4 hurricanes and have flooded all 4 times. The pandemic almost closed our doors. Thankfully we problem solved our way through everything that has come at us. I am very thankful for our amazing and hard-working staff and a community that has always helped and supported us.
As you know, we’re big fans of Catch 27. For our readers who might need to become more familiar, what can you tell them about the brand?
Catch 27 stands in the heart of historic St. Augustine, Florida. We believe in preparing and serving fresh, locally caught seafood from the nation’s 27th State. We cook everything from scratch with seasonal ingredients and local produce. Our Fish, Shrimp, and Clams are caught in Florida waters and delivered fresh daily. The selection varies from Snapper to Sheepshead, Mahi Mahi to Triggerfish, and Flounder to Black Drum. Sea folk and Landlubbers will all find something they’ll enjoy.
How do you define success?
What is the right thing? Success is the downstream outcome of doing the right thing. Working hard, telling the truth, being kind, sincere, and humble, putting others before yourself, and not taking shortcuts. If you do all of those things, you’ll find success.
