Hi Dane, we’re thrilled to have a chance to learn your story today. So, before we get into specifics, maybe you can briefly walk us through how you got to where you are today.
Salt Run Barbecue started as a competition team. We had success competing which grew into setting up monthly at the Nocatee Farmers Market. After months of operating out of a pop-up tent, we decided to purchase a food trailer and focus on craft barbecue. It’s small, and we called it “Big Blue.” While we pop up randomly throughout the month, our primary focus is the Nocatee Farmers Market every third Saturday.
Can you talk to us about the challenges and lessons you’ve learned along the way? Would you say it’s been easy or smooth in retrospect?
I have no previous restaurant experience. Navigating the initial inspection took some time, but we passed the inspection process the first time and are a self-sufficient food trailer.
Great, so let’s talk business. Can you tell our readers more about what you do and what you think sets you apart from others?
Salt Run Barbecue serves Texas-style craft barbecue. What sets our food apart from other restaurants is our cooking process. We smoke everything on a Texas-made 500-gallon offset smoker with oak, pecan, and cherry. There is no electricity involved. Sourcing the best meat, strict fire management, and attention to detail produce a superior product; Salt Run Barbecue is the only husband-wife barbecue trailer in town. Kimra is the smiling face behind the counter and manages all the front-of-house duties, and I do the rest. Smoking craft barbecue can take 12-14 hours, so having Kimra manage the front-of-house duties is a lifesaver. Our most popular product is brisket. Some say it’s the best in town, but you’d have to try it yourself! We don’t believe in the sauce. We offer a thin sweet sauce to compliment our barbecue but believe it’s best enjoyed without it.
We love surprises, fun facts, and incredible stories. Can you share something that might surprise us?
We don’t operate our food trailers full-time. I am a full-time flight paramedic, and my wife is a registered nurse, which limits us from setting up more frequently. We are open monthly at the Nocatee Farmers Market (10-1p, and we sell out, so get there early). We are avid craft beer enthusiasts, so we also set up at a few of the breweries throughout the month.
