My journey started with a passion for creating a better fast-casual dining experience — one that combines great food, convenience, and technology. With my background in hospitality and business, I saw an opportunity to build a brand that was different from traditional restaurant concepts.

Tossgreen was created as a modern fast-casual restaurant inspired by global flavors. Rather than focusing on only one category, we wanted to create a concept that blends modern Mexican cuisine with influences from Mediterranean, Indian, and other global cuisines. Our goal was to offer fresh, customizable meals with bold flavors that fit today’s diverse lifestyles and preferences.

As we built Tossgreen, we quickly learned that creating a successful restaurant requires much more than serving great food. Like many small businesses, we faced challenges with attracting customers, marketing efficiently, managing labor, improving operations, and building systems that would allow the business to grow.

Through continuous improvement, listening to our customers, and creating better systems, Tossgreen continued to grow year over year. We achieved approximately 30% growth from 2025 to 2026, with continued momentum as we expand our brand and improve our operations.

Those challenges also led us to create FlipPioneer — an AI-powered technology ecosystem that was originally built to solve our own problems at Tossgreen. FlipGrowth helps us connect with customers through AI-powered marketing, social media content, automated posting, blogs, search optimization, and customer engagement. FlipNumbers helps us make smarter decisions around scheduling, labor planning, and operational efficiency. FlipCater helps us expand catering and online ordering opportunities while creating a stronger connection with our customers.

Tossgreen became the real-world testing environment for FlipPioneer. Instead of building technology based only on ideas, we built it by solving real challenges inside our own business. Every customer interaction, operational improvement, and lesson learned helped us refine a system that could support not only Tossgreen’s growth but also other businesses facing similar challenges.

Today, Tossgreen has grown from a local Jacksonville restaurant into a larger vision: creating a technology-enabled business model where great food, strong operations, and intelligent technology work together. We all face challenges, but looking back would you describe it as a relatively smooth road?
Building Tossgreen has definitely not been a smooth road. Like many entrepreneurs, we faced the challenges of building a business from the ground up while navigating the complexities of the restaurant industry.

One of the biggest challenges was learning that having great food is only one part of building a successful brand. Restaurants today must compete for customer attention, manage rising costs, optimize labor, maintain consistent operations, and create systems that allow the business to scale.

As a growing local business, we had to be creative and resourceful. We could not rely on large budgets or teams like national brands, so we focused on finding smarter ways to operate. We invested time into understanding our customers, improving our processes, and building technology solutions that could help us do more with less.

Those challenges became the foundation for FlipPioneer. Instead of accepting the limitations that many small businesses face, we started building tools to solve our own problems — from customer acquisition and digital marketing to scheduling, labor optimization, catering, and operational efficiency.

Building both Tossgreen and FlipPioneer at the same time required persistence, patience, and a willingness to continuously learn. The journey was challenging, but every obstacle helped us create a stronger business model and a better understanding of what small businesses truly need.

Looking back, the challenges were also opportunities. They pushed us to build not just a restaurant brand, but a technology-enabled system designed to help businesses operate smarter and grow more efficiently.

Over the next 5–10 years, we believe the restaurant industry will continue to evolve toward a more technology-enabled, customer-focused, and efficient model.

Customers are looking for more than just convenience — they want fresh, high-quality food with more variety, personalization, and options that fit different lifestyles. We believe concepts that combine bold global flavors with customizable meals will continue to grow because they appeal to a wider range of customers.

At the same time, technology will play a much larger role in how restaurants operate. Many businesses will move beyond using separate tools for marketing, operations, staffing, and customer engagement. The future will be about connected systems that help restaurants make smarter decisions in real time.

AI will become an important partner for small and growing businesses by helping them better understand customers, improve efficiency, optimize labor, and create stronger experiences. The brands that successfully combine hospitality with intelligent technology will have a significant advantage.
