Hi Allison, thanks for joining us today. We’d love for you to start by introducing yourself.
I grew up in Champaign, IL as the youngest daughter with three older brothers, in a home where education and creativity were equally valued. My father was a college professor, and my mother an elementary school principal, so learning was always at the center of our lives—but so was gathering.
My parents loved to entertain and were part of a gourmet club where friends would come together to share dishes, exchange recipes, and celebrate food as an experience. Our home was often filled with dozens of people, laughter, and beautifully prepared meals. I proudly held the role of honorary dishwasher and table decorator, where I began developing an eye for presentation and detail.
From a young age, I learned the balance of a thoughtfully curated charcuterie board, the elegance of a well-set table with fine china, and even the basics of wine pairing. Before Martha Stewart, there was my mom—teaching me that food is not just nourishment, but an expression of love and creativity.
Homemade chicken and tuna salads, Jell-O molds, and classic casseroles were staples in our daily meals. Those early experiences laid the foundation for what would eventually become Green Salad Girl—a brand rooted in fresh ingredients, thoughtful presentation, and the joy of bringing people together through food.
I’m sure it wasn’t obstacle-free, but would you say the journey has been fairly smooth so far?
It definitely hasn’t been a smooth road—but every chapter has shaped the purpose behind Green Salad Girl.
I’ve always believed life is a journey, not a sprint. I earned my Bachelor of Fine Arts in Musical Theatre from Illinois Wesleyan University, and right out of the gate, I experienced an incredible high—landing my first audition in New York City and joining the national tour of Ain’t Misbehavin’. I performed in 60 cities over nine months, and that experience exposed me to the richness and diversity of people and landscapes across the country at a very young age.
While performing was exciting, I always felt equally fulfilled helping others. My day jobs naturally led me into customer and financial services, and after working in personal banking, I relocated to Jacksonville following the financial recession at the end of 2009.
My parents had always encouraged me to explore teaching, and when my father was diagnosed with dementia in 2012, that calling became very clear. I transitioned into education and spent years teaching elementary music throughout Duval County Public Schools, working across more than 46 schools.
During that time, I witnessed firsthand how a lack of proper nutrition impacted children’s ability to focus, retain information, and truly thrive. Many students without access to balanced, nutrient-rich meals struggled with attention and behavioral challenges. That realization stayed with me.
At the same time, the stress of teaching began to take a toll on my own health, leading to hormonal imbalances. Turning to organic, plant-based nutrition became a key part of my personal healing journey—and ultimately, it planted the seed for what Green Salad Girl would become.
Great, so let’s talk business. Can you tell our readers more about what you do and what you think sets you apart from others?
My professional journey has been anything but linear, and I truly believe that every role I’ve held has shaped the foundation of who I am today and what I bring to Green Salad Girl.
I’ve worked in financial services and spent many years in elementary education, but I’ve also continued to nurture my creative side as a jazz vocalist, performing with bands throughout North Central Florida. More recently, I became a certified yoga instructor and have been part of the yoga communities in both Jacksonville and St. Augustine for over 18 years. That blend of wellness, creativity, and connection has deeply influenced my approach to both life and business.
Beyond the stage and classroom, I’m incredibly proud of my work as a visual artist and digital creator. Through my photography brand, I’ve had the opportunity to support small businesses and emerging artists by helping them tell their stories and elevate their presence.
After moving to the Julington Creek area, my connection to nature and passion for sustainable living really began to take root. That shift inspired me to think more intentionally about how I live, what I consume, and how I serve my community.
What sets me apart is the fusion of all these experiences—education, performance, wellness, and visual storytelling—into one purpose-driven brand. Green Salad Girl is not just about food; it’s about nourishment, creativity, and community. It reflects a lifestyle that many people don’t immediately see when they meet me, but one that is deeply intentional and continuously evolving.
What I’m most proud of is having the courage to embrace all sides of myself and bring them together into something meaningful that can impact others in a positive way.
What would you say have been one of the most important lessons you’ve learned?
The most important lesson I’m currently learning as a small business owner is not to wait for validation from others. Some of your greatest supporters are the customers you haven’t even met yet.
I’ve also learned that education is just as important as the product itself. Taking the time to share knowledge, inspire healthier choices, and truly connect with people adds value far beyond a single sale. When you go above and beyond to ensure your customers feel seen, cared for, and appreciated, it always comes full circle. People may come for the food, but they remember the experience.
Another lesson that’s deeply important to me is the responsibility we have to future generations. The safety and wellness of our children should always be a priority. Without access to clean water, nutritious food, and clean air, we can’t expect our communities to truly thrive.
I also believe that empowerment starts at home. No matter your living situation—whether it’s an apartment balcony or a backyard—you can grow your own food. There is something incredibly powerful about reconnecting with what we consume and taking even small steps toward a more sustainable, nourishing lifestyle.
