Daily Inspiration: Meet Lauren Henry

Today we’d like to introduce you to Lauren Henry.

Hi Lauren, it’s an honor to have you on the platform. Thanks for taking the time to share your story with us – to start maybe you can share some of your backstory with our readers?
Greenhouse started end of 2019 beginning of 2020 as an idea that formed from a mobile experience bar, Lauren Henry owned. She wanted to created a wine bar with interior plants in the community she lived. As she was starting, covid hit. She pivoted her idea into a mobile plant pop-up. Capitalizing on the interior plant boom that quickly happened. Over the course of covid she sold thousands of plants across the Jacksonville area in open air markets. Learning the industry inside and out, she grew her brand and vision of what was to come. During that time she viewed and create plans in two different locations which after months of planning fell through. It was when she decided to take a chance on a location in the Brooklyn neighborhood that Greenhouse as we know it today started forming.
The concept quickly starting taking shape. In November 2022 the doors to Greenhouse’s Brooklyn location opened. It was a coffee bar, plant shop and low ABV cocktail bar. The success from the building following started strong. With thousands of people moving to the Jacksonville neighborhood and Brooklyn growing with new residents, it was a perfect fit. Over the last three years, Greenhouse has honed in on a unique coffee program offering quarterly menu changes with a focus on delicious and fun coffee and matcha offerings. They have built a strong wine program with emphasis on natural wines. Expanding in the subscription services based on pairing wine and zodiac signs. Lastly, they incorporated a food program that has been pivotal in their growing success. Making unique grilled cheese sandwiches, that are the perfect compliment to their brand.

Can you talk to us a bit about the challenges and lessons you’ve learned along the way. Looking back would you say it’s been easy or smooth in retrospect?
Nothing ever great comes easy or fast. It’s been a long road, and the journey has included setbacks, failures, roadblocks, and more learning curves than I could count.
One of the biggest challenges came in 2023, when a major shift in our leadership structure left me navigating the operation in a completely new way. It stretched me in ways I didn’t expect, but it also became a turning point.
By choosing to rise to the moment, I used that season to fuel our growth. And as 2025 comes to a close, those challenges have laid the foundation for two of the strongest years Greenhouse has ever experienced.

Can you tell our readers more about what you do and what you think sets you apart from others?
People close to me, would say Im a great project manager, but I’d say my biggest strength in business is that once I create a vision of what I want, I never look back or dwell on the “what if’s” or the challenges that could arise. I look forward and push through. If I get to a place where I firmly believe in what Im building, there’s no stopping me. I never get to a place, where I sit back and say, “i did it.” Im always working on growth and what I can do better, how I can be better and whats next.
